Grilled Nectarines with Blackberry Balsamic Reduction Recipe

Ingredients

  • 4 nectarines, halved and pitted
  • 1 cup balsamic vinegar
  • ¼ cup sugar
  • 2 pints blackberries
  • Pinch of salt
  • Vanilla ice cream
  • Mint sprigs

Instructions Blackberry Balsamic Reduction

Pour the balsamic vinegar in a sauce pan with the blackberries and bring to a slight boil. Reduce temperature to a simmer.

Mash the blackberries using a potato masher or similar utensil, then add the sugar and continue to simmer for 15 minutes.

Strain the berries and continue to cook on low until the mixture coats the back of a spoon. Taste-test often, adding more sugar to sweeten to taste. Add a pinch of salt and stir.

Instructions Grilled Nectarines

Cut the nectarines in half and remove the pit. Drizzle with the balsamic reduction.

Brush the top of the grill with oil and place the nectarines cut side down on the hot grill. Grill the nectarines 3-4 minutes until warmed through and marked, then flip over and lightly grill the other side.

Place a grilled nectarine in a bowl with a scoop of ice cream and drizzle with the blackberry balsamic. Garnish with a sprig of mint and enjoy.
