Cowboy Caviar Recipe

A flavorful dip or side dish made with a zesty combination of peppers, beans, and onions.

Ingredients:

  • 1 15 oz. can black eyed beans drained and rinsed
  • 1 15 oz. can black beans drained and rinsed
  • 1 15 oz. can sweet corn drained
  • 1 can mild Rotel drained
  • ½ red onion diced
  • 1 red pepper diced
  • ½ green bell pepper diced
  • 1 whole jalapeño
  • 1 avaocado firm by ripe, diced
  • 1 bottle of zesty Italian dressing
  • 1 lime
  • Cilantro for garnish

Instructions:

  • Drain and rinse the beans, but do not rinse the corn, then pour into a large bowl
  • Add the diced red onion, red pepper, green pepper, and jalapeño then mix well
  • Add half the bottle of zesty Italian dressing and the juice of half of the lime
  • Add the remainder of the dressing to taste
  • Add the diced avocado just before serving and mix in gently
  • Salt and pepper to taste and garnish with the sliced lime and cilantro

Enjoy as a side dish or as a dip.
