Cowboy Caviar Recipe
A flavorful dip or side dish made with a zesty combination of peppers, beans, and onions.
Ingredients:
- 1 15 oz. can black eyed beans drained and rinsed
- 1 15 oz. can black beans drained and rinsed
- 1 15 oz. can sweet corn drained
- 1 can mild Rotel drained
- ½ red onion diced
- 1 red pepper diced
- ½ green bell pepper diced
- 1 whole jalapeño
- 1 avaocado firm by ripe, diced
- 1 bottle of zesty Italian dressing
- 1 lime
- Cilantro for garnish
Instructions:
- Drain and rinse the beans, but do not rinse the corn, then pour into a large bowl
- Add the diced red onion, red pepper, green pepper, and jalapeño then mix well
- Add half the bottle of zesty Italian dressing and the juice of half of the lime
- Add the remainder of the dressing to taste
- Add the diced avocado just before serving and mix in gently
- Salt and pepper to taste and garnish with the sliced lime and cilantro
Enjoy as a side dish or as a dip.
